Peckham Paloma
A true Mexican classic with a Peckham twist. In other words – what we do best. Both mellow & exciting, tart & sweet, simple & lavish. Tastes like golden hour on a rooftop in Mexico City – or South East London. We’re cool with either.
Ingredients:
40ml El Rayo Reposado
30ml Pink grapefruit juice
10ml Lime juice
10ml Sugar syrup*
Grapefruit soda
Fresh grapefruit slice
Sprig of rosemary
Method:
Combine all the ingredients into a highball glass with ice
Top with grapefruit soda
Garnish with a fresh grapefruit slice and sprig of rosemary
Tip:
We love London Essence pink grapefruit soda
*For a quick and easy batch of sugar syrup, dissolve two cups sugar in one cup water over a low heat. Leave to cool, bottle and keep in the fridge for up to a month.
